Cooking on Gas? Here’s What Should Leave the Kitchen With the Steam
A gas flame produces heat and also combustion pollutants. Good cooking ventilation must move gases and particles outdoors—not merely make the kitchen smell better.
The blue flame is not the whole air-quality story
Gas cooking can produce nitrogen dioxide and carbon monoxide, while cooking food creates particles regardless of fuel. Flame color can signal a problem, but a normal-looking flame does not measure the room’s pollutant level.
Exhaust location matters
A recirculating hood may capture some grease or particles when maintained, but it does not send combustion gases outdoors. Confirm whether the hood is ducted outside, use an effective fan setting and keep filters clean.
Use the back burners when the hood captures them better
Capture varies with hood size, height, airflow and burner location. Keep pans under the hood, use lids when practical and avoid blocking the intake. An open window is not a guaranteed substitute for local exhaust.
Maintain appliances and alarms
Have fuel-burning appliances installed and serviced by qualified professionals. Keep vents and flues unobstructed. Install carbon-monoxide alarms according to local rules and manufacturer instructions; test and replace them on schedule.
Never heat the home with a cooking appliance
Do not use a gas oven or burners for space heating, and never use a grill, camp stove or generator indoors or in an attached garage. Carbon monoxide is colorless and odorless, so smell cannot warn you.
Reduce exposure without turning the topic into panic
Short cooking events differ from chronic equipment problems and unvented use. Focus first on source capture, correct operation and maintenance. Families considering replacement can compare effective electric options during the next planned appliance change.

Make exhaust part of cooking
- Turn on an outdoor-venting hood before ignition.
- Use the hood setting that captures the cooking plume.
- Cook on covered pans and back burners when practical.
- Keep hood filters and appliance parts maintained as directed.
- Continue exhaust after cooking as the manufacturer recommends.
- Test carbon-monoxide alarms and schedule qualified appliance service.

Leave and get help when
- a carbon-monoxide alarm sounds;
- anyone has headache, dizziness, nausea, confusion, weakness or collapse around fuel use;
- you smell unburned gas or hear leaking gas;
- the flame, soot, venting or appliance operation is abnormal.
Move everyone, including pets, to fresh air and contact local emergency or gas-utility services from a safe location. Do not search for a gas leak or operate switches. Seek medical evaluation for possible carbon-monoxide exposure.
